Dough ke liye:

  • 1 cup rice flour (chawal ka atta)
  • 1 cup water
  • 1 tsp ghee
  • Salt, ek chhutki

Step 1: Stuffing Banaana

  1. Ek pan mein 1 tbsp ghee garam karein.
  2. Grated coconut aur grated jaggery daalein aur achhe se mix karein.
  3. Jab jaggery melt ho jaye aur mixture thick ho jaye, tab usme cardamom powder aur chopped dry fruits (optional) daalein.
  4. Is mixture ko 5-7 minutes tak cook karein jab tak stuffing thick na ho jaye. Phir ise thanda hone ke liye rakh dein.

Step 2: Dough Banaana

  1. Ek pan mein 1 cup paani garam karein. Paani garam hone par usme thoda sa ghee aur namak daalein.
  2. Ab rice flour ko daalein aur achhe se mix karein.
  3. Flame band karke is mixture ko 2-3 minutes tak dhak kar rakhein.
  4. Thoda thanda hone par dough ko haathon se achhe se gundh lein. Yeh dough soft aur smooth hona chahiye.

Step 3: Modak Banaana (Without Mould)

  1. Thoda dough lein aur uske chhote balls banayein. Har ek ball ko flatten karein aur iske beech mein coconut-jaggery stuffing daalein.
  2. Flattened dough ko edges se fold karein aur modak ki shape dein. Top par ek chhoti si point bana lein.
  3. Sabhi modak ko banana ke baad, ek steamer mein paani garam karein. Phir modak ko banana leaves ya cotton cloth par rakhein aur 10-12 minutes ke liye steam karein.Ukadiche Modak

Step 2: Mould ka use karke modak banana

  1. Mould ko ghee se grease karein taaki dough chipke nahi.
  2. Mould ke andar thoda dough press karein, beech mein thoda jagah chhod kar stuffing bhar dein.
  3. Mould ko band karein aur excess dough ko hata dein.
  4. Ab mould ko kholein aur carefully modak ko nikaalein.
